- 1/2 cup freeze-dried strawberries
- 7 oz (200g) white chocolate (chopped)
- 1/4 cup (60ml) heavy cream
- Optional: Pink food coloring
- 1/4 cup powdered sugar
Instructions
- Blend freeze-dried strawberries into a fine powder. Sift and set aside.
- Heat cream in a saucepan until it just simmers.
- Pour hot cream over chopped white chocolate. Let sit for 2-3 minutes, then stir until smooth.
- Mix 3-4 tbsp strawberry powder into ganache. Add food coloring if desired.
- Cover and refrigerate ganache for 1-2 hours.
- Scoop and roll into balls. Coat with strawberry powder or powdered sugar.
- Serve in mini cupcake liners or store in the fridge.
Notes
- Use good-quality white chocolate for the best results.
- Store truffles in an airtight container in the fridge for up to 1 week.
- To freeze, place on a baking sheet until firm, then transfer to a freezer-safe container.
