- 8 oz penne or spaghetti
- Salt for pasta water
- 8 oz medium shrimp, peeled and deveined
- 1/4 teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- Kosher salt and black pepper, to taste
- 3 cloves garlic, minced
- 4 Roma tomatoes, chopped
- 1/4 cup fresh basil leaves, chopped
- 6 oz fresh spinach
- 2 tablespoons olive oil
- 1/4 cup Parmesan cheese (optional)
Instructions
- Cook pasta in salted water until al dente, reserve 1/2 cup pasta water, then drain.
- Heat olive oil in a skillet, season shrimp with paprika, pepper flakes, Italian seasoning, salt, and pepper, then sauté for 2-3 minutes per side. Remove and set aside.
- In the same skillet, sauté garlic until fragrant. Add tomatoes, cook until soft, then stir in spinach until wilted.
- Return shrimp to skillet, toss in pasta, and add pasta water if needed to adjust sauce consistency.
- Garnish with fresh basil and Parmesan before serving.
