  • 8 oz penne or spaghetti
  • Salt for pasta water
  • 8 oz medium shrimp, peeled and deveined
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Kosher salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 4 Roma tomatoes, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 6 oz fresh spinach
  • 2 tablespoons olive oil
  • 1/4 cup Parmesan cheese (optional)

Instructions

  • Cook pasta in salted water until al dente, reserve 1/2 cup pasta water, then drain.
  • Heat olive oil in a skillet, season shrimp with paprika, pepper flakes, Italian seasoning, salt, and pepper, then sauté for 2-3 minutes per side. Remove and set aside.
  • In the same skillet, sauté garlic until fragrant. Add tomatoes, cook until soft, then stir in spinach until wilted.
  • Return shrimp to skillet, toss in pasta, and add pasta water if needed to adjust sauce consistency.
  • Garnish with fresh basil and Parmesan before serving.

  • For extra creaminess, stir in a splash of heavy cream or cream cheese when adding spinach.
