- 36 tater tots
- 10 large eggs
- 1/4 cup milk
- Salt, pepper, garlic powder (to taste)
- Cooked and diced breakfast sausage, turkey bacon, or chicken ham
- Chopped vegetables (bell peppers, onions, spinach, mushrooms)
- 1/2 cup shredded cheese (cheddar, colby jack, or mozzarella)
Instructions
- Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin.
- Microwave tater tots for 2 minutes to soften, then place 3 tots in each muffin cup. Smash into a crust and bake for 10 minutes.
- Lower the oven temperature to 350°F (175°C).
- Add your chosen meats and veggies to the muffin cups.
- Whisk together eggs, milk, and seasonings. Pour into each muffin cup, filling 90%.
- Top with shredded cheese.
- Bake for 20–25 minutes or until eggs are set and cheese is melted.
- Let cool for 5 minutes before serving.
Notes
- Make vegetarian by skipping meat and adding extra veggies.
- Store in the fridge for up to 4 days or freeze for up to 2 months.
