These easy Tater Tot Breakfast Muffins are the perfect mix of crispy tater tots, fluffy eggs, and customizable toppings. Ideal for meal prep, brunch, or an on-the-go breakfast, they’re quick to make, family-friendly, and endlessly versatile


Ingredients

  • 36 tater tots
  • 10 large eggs
  • 1/4 cup milk
  • Salt, pepper, garlic powder (to taste)
  • Cooked and diced breakfast sausage, turkey bacon, or chicken ham
  • Chopped vegetables (bell peppers, onions, spinach, mushrooms)
  • 1/2 cup shredded cheese (cheddar, colby jack, or mozzarella)

Instructions

  • Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin.
  • Microwave tater tots for 2 minutes to soften, then place 3 tots in each muffin cup. Smash into a crust and bake for 10 minutes.
  • Lower the oven temperature to 350°F (175°C).
  • Add your chosen meats and veggies to the muffin cups.
  • Whisk together eggs, milk, and seasonings. Pour into each muffin cup, filling 90%.
  • Top with shredded cheese.
  • Bake for 20–25 minutes or until eggs are set and cheese is melted.
  • Let cool for 5 minutes before serving.

Notes

  • Make vegetarian by skipping meat and adding extra veggies.
  • Store in the fridge for up to 4 days or freeze for up to 2 months.
