Description

This tater tot breakfast casserole combines crispy tots, cheesy eggs, and savory turkey bacon for the ultimate one-dish breakfast.


Ingredients

  • 1 lb turkey bacon, cooked and crumbled
  • 32 oz frozen tater tots
  • 12 large eggs
  • 1 cup whole milk
  • 1 cup Monterey Jack cheese, shredded
  • 2 cups sharp cheddar cheese, shredded (divided)
  • 1/4 cup green onions, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Spread tater tots in the dish.
  • In a bowl, whisk eggs, milk, salt, and pepper. Stir in Monterey Jack, 1 cup cheddar, and half the green onions.
  • Pour over tater tots and top with turkey bacon.
  • Bake for 45–50 minutes until eggs are set.
  • Add remaining cheddar; bake 5–7 minutes until melted.
  • Rest 5 minutes. Garnish with green onions and serve.
