This tater tot breakfast casserole combines crispy tots, cheesy eggs, and savory turkey bacon for the ultimate one-dish breakfast.

- 1 lb turkey bacon, cooked and crumbled
- 32 oz frozen tater tots
- 12 large eggs
- 1 cup whole milk
- 1 cup Monterey Jack cheese, shredded
- 2 cups sharp cheddar cheese, shredded (divided)
- 1/4 cup green onions, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Spread tater tots in the dish.
- In a bowl, whisk eggs, milk, salt, and pepper. Stir in Monterey Jack, 1 cup cheddar, and half the green onions.
- Pour over tater tots and top with turkey bacon.
- Bake for 45–50 minutes until eggs are set.
- Add remaining cheddar; bake 5–7 minutes until melted.
- Rest 5 minutes. Garnish with green onions and serve.
