Ingredients

- ½ lb penne pasta
- 1 lb chicken breasts (cut into 1-inch strips)
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 cup onion (chopped)
- 4 garlic cloves (minced)
- 1 (15 oz) can diced tomatoes
- 1 cup heavy cream
- 1 ½ cups cheddar cheese (shredded)
- 1 tablespoon butter
- 2 tablespoons cilantro (chopped)
Southwest Seasoning:
- 1 ½ teaspoons chili powder
- ½ teaspoon cumin
- ½ teaspoon oregano
- 1 teaspoon paprika
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ⅛ teaspoon cayenne pepper
Instructions
- Mix southwest seasoning and toss with chicken and honey.
- Cook penne pasta and set aside.
- Sear chicken in olive oil, then set aside.
- Sauté onion and garlic, add tomatoes and seasoning, then simmer.
- Stir in cream, cheddar, and chicken. Toss with pasta and garnish with cilantro.
Notes
Refrigerate leftovers for up to 3 days or freeze for up to 2 months. Reheat before serving.
