Creamy pasta with tender chicken, cheddar cheese, and bold southwest spices. A hearty, flavorful dinner perfect for any occasion


Ingredients

  • ½ lb penne pasta
  • 1 lb chicken breasts (cut into 1-inch strips)
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 cup onion (chopped)
  • 4 garlic cloves (minced)
  • 1 (15 oz) can diced tomatoes
  • 1 cup heavy cream
  • 1 ½ cups cheddar cheese (shredded)
  • 1 tablespoon butter
  • 2 tablespoons cilantro (chopped)

Southwest Seasoning:

  • 1 ½ teaspoons chili powder
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • 1 teaspoon paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ⅛ teaspoon cayenne pepper

Instructions

  • Mix southwest seasoning and toss with chicken and honey.
  • Cook penne pasta and set aside.
  • Sear chicken in olive oil, then set aside.
  • Sauté onion and garlic, add tomatoes and seasoning, then simmer.
  • Stir in cream, cheddar, and chicken. Toss with pasta and garnish with cilantro.

Notes

Refrigerate leftovers for up to 3 days or freeze for up to 2 months. Reheat before serving.
