Mushrooms:

  • 1 pound mushrooms (button, cremini, or mixed), cleaned
  • 1 tablespoon oil
  • Salt and pepper to taste

Browned Butter Sauce:

  • 1/4 cup butter
  • 2 cloves garlic, chopped
  • 1 teaspoon thyme, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cleaned mushrooms with oil, salt, and pepper.
  2. Roast the mushrooms in a single layer on a baking sheet for 20 minutes, stirring halfway through, until caramelized.
  3. Make the browned butter sauce: Melt butter over medium heat, stirring until golden brown. Remove from heat, then mix in garlic, thyme, and lemon juice.
  4. Toss and serve: Combine roasted mushrooms with the browned butter sauce. Season with salt and pepper to taste. Serve warm.
