Description

This Roasted Jalapeño Popper Grilled Cheese combines the smoky heat of roasted jalapeños with creamy cheese, crispy bacon, and buttery toasted bread. Perfect for a quick lunch, an indulgent dinner, or even a spicy snack!


Ingredients

  • 4 medium jalapeños, halved and seeded
  • 1 tbsp olive oil
  • 4 oz cream cheese, room temperature
  • ½ tsp garlic salt
  • ¼ tsp black pepper
  • ½ tsp onion powder
  • 1 cup (113 g) mild cheddar cheese, shredded
  • 6 strips bacon, cooked
  • 4 slices Texas toast
  • 4 tbsp unsalted butter

Instructions

  • Preheat oven to 425°F and line a baking sheet with parchment.
  • Brush jalapeños with olive oil and roast for 15 minutes. Cool slightly.
  • Mix cream cheese, garlic salt, pepper, and onion powder. Fold in chopped jalapeños.
  • Butter one side of each bread slice. Spread cream cheese mixture on the other side, top with bacon and cheddar. Close with another slice of bread.
  • Grill on medium heat for 3-5 minutes per side until golden and melty.
