This Roasted Jalapeño Popper Grilled Cheese combines the smoky heat of roasted jalapeños with creamy cheese, crispy bacon, and buttery toasted bread. Perfect for a quick lunch, an indulgent dinner, or even a spicy snack!

- 4 medium jalapeños, halved and seeded
- 1 tbsp olive oil
- 4 oz cream cheese, room temperature
- ½ tsp garlic salt
- ¼ tsp black pepper
- ½ tsp onion powder
- 1 cup (113 g) mild cheddar cheese, shredded
- 6 strips bacon, cooked
- 4 slices Texas toast
- 4 tbsp unsalted butter
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment.
- Brush jalapeños with olive oil and roast for 15 minutes. Cool slightly.
- Mix cream cheese, garlic salt, pepper, and onion powder. Fold in chopped jalapeños.
- Butter one side of each bread slice. Spread cream cheese mixture on the other side, top with bacon and cheddar. Close with another slice of bread.
- Grill on medium heat for 3-5 minutes per side until golden and melty.
