- 1 head garlic
- 1 tsp olive oil
- 2 pounds red potatoes (quartered)
- Kosher salt
- 6 tablespoons butter
- ¾ cup half-and-half
- Fresh ground pepper
- Fresh herbs (optional, for garnish)
Instructions
- Roast garlic at 375°F for 1 hour. Squeeze cloves from skins when cool.
- Boil potatoes in salted water for 15 minutes until fork-tender. Drain.
- Warm butter and half-and-half, then add to potatoes with roasted garlic.
- Mash potatoes until creamy with some lumps. Season with salt and pepper.
- Garnish with fresh herbs and serve hot.
Notes
Refrigerate leftovers for up to 3 days or freeze for 2 months. Reheat with a splash of liquid to refresh.
