Description

Creamy, buttery mashed potatoes infused with the rich, sweet flavor of roasted garlic. A versatile and delicious side dish for any meal.


Ingredients

  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (quartered)
  • Kosher salt
  • 6 tablespoons butter
  • ¾ cup half-and-half
  • Fresh ground pepper
  • Fresh herbs (optional, for garnish)

Instructions

  • Roast garlic at 375°F for 1 hour. Squeeze cloves from skins when cool.
  • Boil potatoes in salted water for 15 minutes until fork-tender. Drain.
  • Warm butter and half-and-half, then add to potatoes with roasted garlic.
  • Mash potatoes until creamy with some lumps. Season with salt and pepper.
  • Garnish with fresh herbs and serve hot.

Notes

Refrigerate leftovers for up to 3 days or freeze for 2 months. Reheat with a splash of liquid to refresh.
