Description
Mini pecan pie bites with a buttery crust, gooey caramel-like filling, and toasted pecans. Perfect for holidays and easy to serve!
Ingredients
– 2 tbsp butter (for pecans)
– 2 ½ cups chopped pecans
– 1 cup (2 sticks) unsalted butter
– ½ cup brown sugar
– 2 cups all-purpose flour
– ½ tsp salt
– 1 ½ cups brown sugar
– ¾ cup light corn syrup
– 2 tbsp melted butter
– 1 tsp vanilla
Instructions
1. Preheat oven to 350°F and spray a mini muffin pan.
2. Toast pecans in butter until golden.
3. Mix crust ingredients; press dough into muffin cups.
4. Combine filling ingredients and add toasted pecans.
5. Fill crusts ¾ full; bake 15 minutes.
6. Add more filling after baking; cool completely before removing.

– Toast pecans for richer flavor.
– Don’t overfill to prevent bubbling over.
