- 12 Tbsp. unsalted butter
- 1 1/4 cups chocolate chips, divided
- 3/4 cup cocoa powder
- 1/2 tsp. salt
- 3/4 cup sugar
- 3/4 cup packed brown sugar (light or dark)
- 3 large eggs
- 2 Tbsp. vegetable oil
- 1 tsp. peppermint extract
- 3/4 cup flour
- 1 1/2 tsp. espresso powder (optional)
- Crushed peppermint candies or candy canes (for garnish)
Chocolate Ganache:
- 1 cup chocolate chips
- 1/2 cup heavy cream
- 1 tsp. peppermint extract
- 1 tsp. unsalted butter
- Pinch of salt
Instructions
- Preheat oven to 350°F and prepare an 8×8 pan with parchment paper.
- Melt butter and 1/2 cup chocolate chips in a microwave-safe bowl, stirring until smooth.
- Stir in cocoa powder, salt, and espresso powder (if using).
- Mix in sugar and brown sugar until combined.
- Whisk in eggs one at a time, then add peppermint extract and vegetable oil.
- Fold in flour and remaining chocolate chips until just combined.
- Pour into prepared pan and bake for 35–40 minutes. Let cool completely.
- For ganache, heat cream and pour over chocolate chips. Stir until smooth. Add peppermint extract, butter, and salt.
- Spread ganache over brownies, garnish with crushed candy canes, and chill for 1 hour.
Notes
- For a subtler peppermint flavor, reduce the extract to ½ tsp.
- Use parchment paper for easy removal.
- Add a pinch of sea salt on top for an extra flavor boost.
