Description

These One Bowl Peppermint Brownies are rich, fudgy, and bursting with holiday flavor. Topped with creamy peppermint ganache and crushed candy canes, they’re the ultimate holiday treat. Easy to make and perfect for parties or gifts!


Ingredients

  • 12 Tbsp. unsalted butter
  • 1 1/4 cups chocolate chips, divided
  • 3/4 cup cocoa powder
  • 1/2 tsp. salt
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar (light or dark)
  • 3 large eggs
  • 2 Tbsp. vegetable oil
  • 1 tsp. peppermint extract
  • 3/4 cup flour
  • 1 1/2 tsp. espresso powder (optional)
  • Crushed peppermint candies or candy canes (for garnish)

Chocolate Ganache:

  • 1 cup chocolate chips
  • 1/2 cup heavy cream
  • 1 tsp. peppermint extract
  • 1 tsp. unsalted butter
  • Pinch of salt

Instructions

  • Preheat oven to 350°F and prepare an 8×8 pan with parchment paper.
  • Melt butter and 1/2 cup chocolate chips in a microwave-safe bowl, stirring until smooth.
  • Stir in cocoa powder, salt, and espresso powder (if using).
  • Mix in sugar and brown sugar until combined.
  • Whisk in eggs one at a time, then add peppermint extract and vegetable oil.
  • Fold in flour and remaining chocolate chips until just combined.
  • Pour into prepared pan and bake for 35–40 minutes. Let cool completely.
  • For ganache, heat cream and pour over chocolate chips. Stir until smooth. Add peppermint extract, butter, and salt.
  • Spread ganache over brownies, garnish with crushed candy canes, and chill for 1 hour.

Notes

  • For a subtler peppermint flavor, reduce the extract to ½ tsp.
  • Use parchment paper for easy removal.
  • Add a pinch of sea salt on top for an extra flavor boost.
