- 2 boneless, skinless chicken breasts (sliced into 4 cutlets)
- 3 tbsp olive oil
- 1 tsp salt (divided)
- 1 tsp freshly ground black pepper (divided)
- 2 tbsp garlic powder
- 1 tbsp fresh oregano (or 1 tsp dried)
- 1 zucchini (thinly sliced)
- 2 tomatoes (chopped)
- 1/2 onion (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp fresh parsley (chopped for garnish)
Instructions
- Preheat Oven: Set oven to 400°F (200°C).
- Season Chicken: Rub chicken with 1 tbsp olive oil, 1/2 tsp salt, 1/2 tsp black pepper, garlic powder, and oregano.
- Assemble: Place chicken in a baking dish. Add zucchini, tomatoes, and onion around the chicken. Drizzle with remaining olive oil. Sprinkle salt, pepper, mozzarella, and Parmesan.
- Bake: Cook for 20 minutes. For a golden top, broil for 2-3 minutes.
- Garnish & Serve: Rest for 5 minutes, garnish with parsley, and enjoy!

- Marinate chicken for 30 minutes for extra flavor.
- Add bell peppers or olives for a Mediterranean twist.
