- 1/4 cup chicken broth
- 1 tablespoon honey
- 1/4 cup Dijon mustard

- ½ teaspoon dried oregano
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon fresh chopped chives
Instructions
- Par-boil the potatoes in salted water until fork-tender.
- Sauté the potatoes in olive oil until golden and crispy. Remove and set aside.
- In the same skillet, combine olive oil, mustard, honey, chicken broth, and seasonings. Simmer until thickened.
- Toss the potatoes in the glaze, ensuring they’re fully coated.
- Garnish with chives and serve warm
