- 2 pounds carrots (cut diagonally into 2–3-inch pieces)
- 5 tablespoons butter
- 4 cloves garlic (minced)
- 2 tablespoons honey
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- Chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 425˚F and prepare a baking sheet.
- Melt butter in a skillet, cook garlic until lightly browned, and mix in honey.
- Toss carrots in the honey garlic butter sauce, season with salt and pepper.
- Arrange carrots on the baking sheet in a single layer.
- Roast for 22–25 minutes, garnish with parsley, and serve.
