Description

This cozy Lasagna Soup has all the comforting flavors of classic lasagna but in a warm, hearty bowl. Made in one pot with ground beef, pasta, and melty cheeses, it’s an easy and family-friendly recipe perfect for weeknights.


Ingredients

  • 12 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 1 (15-ounce can) Diced Tomatoes (don’t drain)
  • 1 (15-ounce can) Tomato Sauce
  • 3 ounces Tomato Paste (¼ cup)
  • 4 cups Chicken Broth
  • 12 cups Water (as needed)
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Sea Salt (adjust to taste)
  • Black Pepper, to taste
  • 8 ounces Bowtie Pasta (uncooked)

Suggested Toppings:

  • ½ cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese, shredded
  • ¼ cup Parmesan Cheese, grated
  • ¼ cup Fresh Parsley, chopped

Instructions

  • Heat a soup pot over medium-high heat and add olive oil.
  • Sauté ground beef, onions, and garlic until the beef is browned. Drain excess fat if needed.
  • Add diced tomatoes, tomato sauce, tomato paste, broth, Italian seasoning, salt, and pepper. Stir to combine.
  • Mix in the bowtie pasta, bring the soup to a boil, then reduce heat to a simmer. Cook for 10-15 minutes, stirring frequently.
  • Adjust consistency with more water or broth as needed. Taste and season with additional salt and pepper if desired.
  • Serve topped with ricotta, mozzarella, Parmesan, and fresh parsley.

  • Swap ground beef with turkey for a lighter version.
