This cozy Lasagna Soup has all the comforting flavors of classic lasagna but in a warm, hearty bowl. Made in one pot with ground beef, pasta, and melty cheeses, it’s an easy and family-friendly recipe perfect for weeknights.

- 1–2 tablespoons Olive Oil
- 1 pound Ground Beef
- 1 large Onion, diced
- 4 cloves Garlic, minced
- 1 (15-ounce can) Diced Tomatoes (don’t drain)
- 1 (15-ounce can) Tomato Sauce
- 3 ounces Tomato Paste (¼ cup)
- 4 cups Chicken Broth
- 1–2 cups Water (as needed)
- 1 tablespoon Italian Seasoning
- 1 teaspoon Sea Salt (adjust to taste)
- Black Pepper, to taste
- 8 ounces Bowtie Pasta (uncooked)
Suggested Toppings:
- ½ cup Ricotta Cheese
- 2 ounces Mozzarella Cheese, shredded
- ¼ cup Parmesan Cheese, grated
- ¼ cup Fresh Parsley, chopped
Instructions
- Heat a soup pot over medium-high heat and add olive oil.
- Sauté ground beef, onions, and garlic until the beef is browned. Drain excess fat if needed.
- Add diced tomatoes, tomato sauce, tomato paste, broth, Italian seasoning, salt, and pepper. Stir to combine.
- Mix in the bowtie pasta, bring the soup to a boil, then reduce heat to a simmer. Cook for 10-15 minutes, stirring frequently.
- Adjust consistency with more water or broth as needed. Taste and season with additional salt and pepper if desired.
- Serve topped with ricotta, mozzarella, Parmesan, and fresh parsley.

- Swap ground beef with turkey for a lighter version.
