- 2 sheets of puff pastry, thawed
- 6 ounces Gruyère cheese, shredded
- 8 slices turkey ham
- 8 large eggs
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Chopped chives (optional, for garnish)
- 1 egg whisked with 1 tsp water (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
- Roll out puff pastry sheets and cut into 8 squares. Place on baking sheets.
- Poke the centers with a fork, brush edges with egg wash, and sprinkle salt.
- Add turkey ham and shredded cheese to each square, leaving a well for the egg.
- Bake for 10–15 minutes until puffed and golden.
- Press the centers gently, crack an egg into each, and season.
- Bake for another 10–15 minutes until egg whites are set.
- Garnish with chives and serve warm.
