  • 2 sheets of puff pastry, thawed
  • 6 ounces Gruyère cheese, shredded
  • 8 slices turkey ham
  • 8 large eggs
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped chives (optional, for garnish)
  • 1 egg whisked with 1 tsp water (for egg wash)

Instructions

  • Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
  • Roll out puff pastry sheets and cut into 8 squares. Place on baking sheets.
  • Poke the centers with a fork, brush edges with egg wash, and sprinkle salt.
  • Add turkey ham and shredded cheese to each square, leaving a well for the egg.
  • Bake for 10–15 minutes until puffed and golden.
  • Press the centers gently, crack an egg into each, and season.
  • Bake for another 10–15 minutes until egg whites are set.
  • Garnish with chives and serve warm.
