- 2.5 pounds chuck roast
- 1 pound potatoes, diced
- 3 carrots, peeled and sliced
- 1 medium yellow onion, diced
- 8 oz mushrooms, sliced
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 cup beef stock
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cornstarch
- Water (for slurry)
Instructions
- Season the chuck roast with salt and pepper. Place it in the crockpot.
- Add diced potatoes, carrots, and onions around the roast.
- Whisk together beef stock, Worcestershire sauce, garlic, and seasonings. Pour over the roast and vegetables.
- Cook on low for 7-8 hours or high for 6-7 hours.
- Mix cornstarch and water to create a slurry. Stir into the crockpot 15 minutes before serving to thicken the gravy.
- Add sliced mushrooms and cook for 10-15 minutes. Serve hot.
