  • 1 pound potatoes, diced
  • 3 carrots, peeled and sliced
  • 1 medium yellow onion, diced
  • 8 oz mushrooms, sliced
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 cup beef stock
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cornstarch
  • Water (for slurry)

Instructions

  • Season the chuck roast with salt and pepper. Place it in the crockpot.
  • Add diced potatoes, carrots, and onions around the roast.
  • Whisk together beef stock, Worcestershire sauce, garlic, and seasonings. Pour over the roast and vegetables.
  • Cook on low for 7-8 hours or high for 6-7 hours.
  • Mix cornstarch and water to create a slurry. Stir into the crockpot 15 minutes before serving to thicken the gravy.
  • Add sliced mushrooms and cook for 10-15 minutes. Serve hot.
