- 300 g chicken breast (sliced)
- 100 g cornflour
- 1 egg white
- 2 tbsp dark soy sauce
- 1 tbsp garlic and ginger paste
- 1 tsp sesame oil
- 1 tsp sugar
- 1 tsp white pepper
- 3 tbsp dark soy sauce (for sauce)
- 4 tbsp honey
- 1 tbsp sriracha
- 2 tbsp lemon juice
- Vegetable oil (for frying)
- 2 spring onions (chopped)
Instructions
- Marinate chicken with soy sauce, garlic and ginger paste, sesame oil, sugar, and white pepper for 10 minutes.
- Add egg white to the chicken, mix well, and coat with cornflour.
- Heat oil to 180°C and fry chicken for 1-2 minutes, then fry again for 2-3 minutes for extra crispiness.
- In a clean pan, sauté garlic and ginger paste, then stir in the sauce ingredients (soy sauce, honey, sriracha, lemon juice) until thickened.
- Toss the crispy chicken in the sauce, garnish with spring onions, and serve immediately.
Notes
- For extra spice, increase sriracha or add red pepper flakes.
- Double-frying ensures maximum crispiness.
