- 2 large eggs, beaten
- 1 cup panko breadcrumbs

- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- Vegetable oil, for frying
- For the Wraps:
- 4 slices beef bacon, cooked crispy
- 4 slices Monterey Jack or cheddar cheese
- 4 romaine lettuce leaves
- 1 large tomato, thinly sliced
- 4 large flour tortillas
- 1 small red onion, thinly sliced (optional)
- For the Sweet Chili Mayo:
- 1/2 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tsp fresh lemon juice
Instructions
- Slice chicken breasts lengthwise for thinner pieces. Season with salt and pepper.
- Prepare breading stations with flour, eggs, and a panko seasoning mixture.
- Coat chicken in flour, dip in eggs, and press into panko crumbs.
- Fry chicken in hot oil for 3-4 minutes per side until golden. Drain on paper towels.
- Mix mayonnaise, sweet chili sauce, and lemon juice for the mayo.
- Assemble wraps: spread mayo, add lettuce, tomato, onion, crispy chicken, cheese, and bacon. Roll tightly.
- Serve immediately with extra mayo or dipping sauce.
