Ingredients

  • 1/2 onion, minced
  • 3 cloves garlic, minced

  • 1/4 cup chicken broth
  • 1.25 cups light coconut milk
  • 1 tablespoon tomato paste
  • Fresh cilantro (for garnish)
  • 3 cups cooked jasmine or basmati rice

Instructions

  • Combine chicken, salt, paprika, and oregano in a bowl. Toss to coat.
  • Sear chicken in a skillet until browned, then remove.
