- 1/2 onion, minced

- 1.25 cups light coconut milk
- 1 tablespoon tomato paste

- 3 cups cooked jasmine or basmati rice
Instructions
- Combine chicken, salt, paprika, and oregano in a bowl. Toss to coat.
