Description
Juicy chicken smothered in a creamy, spicy Cajun sauce with garlic, lime, and melted cheddar jack cheese
Ingredients
- For the Sauce: 1 ½ cups chicken broth, ¾ cup heavy cream, 1 tbsp honey, 2 tsp hot sauce, 2 tsp Cajun seasoning, 1 tsp brown sugar, ½ tsp mustard powder, ½ tsp oregano, pinch of cayenne and red pepper flakes.
- For the Chicken: 2 large boneless chicken breasts, 1 ½ tsp Cajun seasoning, 3 tbsp flour, 1–2 tbsp olive oil.
- For the Skillet: 3 tbsp butter, 3 garlic cloves, 3 tbsp flour, 10 oz diced tomatoes with green chilies, ¾ cup cheddar jack cheese, 2 tsp lime juice.
- For Serving: Lime wedges, fresh cilantro.
Instructions
- Drain tomatoes and reserve juice. Mix sauce ingredients.
- Pound chicken, season with Cajun spice and flour, then sear in oil. Set aside.
- Deglaze skillet with reserved tomato juice, then add butter, garlic, and flour.
- Stir in sauce, simmer with tomatoes, and melt cheese. Add lime juice.
- Return chicken to skillet, spoon sauce over, and simmer. Garnish with cilantro and lime

Refrigerate for 3 days or freeze for 2 months. Reheat before serving
