- 5.2 oz dry noodles (any kind)
- 1/2 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1/2 small shallot or red onion, finely chopped
- 1 tbsp sugar
- 1 tsp curry powder
- 1/2 tbsp chili powder (optional)
- 1/4 cup oil (olive oil or neutral oil)
- 1.5 to 2 tbsp vegetarian mushroom oyster sauce
- 1 tbsp dark soy sauce
- 2 tbsp lime juice
Instructions
- Cook noodles until slightly undercooked, rinse with cold water, and set aside.
- In a heatproof bowl, combine cilantro, garlic, shallot, sugar, curry powder, and chili powder.
- Heat oil until sizzling, then pour over the cilantro mixture. Stir well.
- Add oyster sauce, soy sauce, and lime juice to the mixture. Stir to combine.
- Toss in noodles and mix until evenly coated. Adjust seasoning if needed.
- Serve hot, optionally garnished with chili oil or extra cilantro.

- For added heat, increase chili powder or drizzle with chili oil.
