  • Chicken Skewers:
    • 2 lbs boneless chicken breasts, sliced thin
    • 1/2 cup honey
    • 2 tbsp tomato paste
    • 4 tbsp apple cider vinegar
    • 2 tsp chipotle chili powder
    • 1 clove garlic, finely chopped
    • 1/2 tsp salt (optional)
    • 1 tbsp olive oil
  • For Serving:
    • Cooked basmati rice
    • Fresh green salad
    • Lemon or lime wedges

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. Slice chicken breasts into thin strips and thread onto skewers.
  3. Mix honey, tomato paste, vinegar, chipotle chili powder, garlic, and salt.
  4. Marinate chicken skewers with the sauce for 10-30 minutes.
  5. Preheat the grill to medium-high and oil the grates.
  6. Grill skewers for 10-12 minutes, turning and basting every 2-3 minutes, until cooked.
  7. Rest for 3 minutes before serving with rice, salad, and lime wedges.
