  • ½ lb. penne pasta
  • 1 lb. chicken breasts, cut into strips
  • 1 (15 oz.) can diced tomatoes
  • 1 cup heavy cream
  • 1 ½ cups cheddar cheese, shredded
  • 1 cup onion, chopped
  • 4 garlic cloves, minced
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp cilantro, chopped
  • Southwest seasoning:
    • 1 ½ tsp chili powder
    • ½ tsp cumin
    • ½ tsp oregano
    • 1 tsp paprika
    • ¼ tsp black pepper
    • ½ tsp salt
    • ⅛ tsp cayenne

Instructions

  • Mix the Southwest seasoning blend in a bowl.
  • Season chicken with honey and half the spice mix.
  • Cook pasta al dente; set aside.
  • Sauté chicken in olive oil until cooked through; set aside.
  • In the same skillet, sauté onion and garlic in butter.
  • Add tomatoes and remaining spices; simmer.
  • Stir in cream and cheese; let it melt.
  • Combine pasta, chicken, and sauce; toss well.
  • Garnish with cilantro and serve hot.
