- ½ lb. penne pasta
- 1 lb. chicken breasts, cut into strips
- 1 (15 oz.) can diced tomatoes
- 1 cup heavy cream
- 1 ½ cups cheddar cheese, shredded
- 1 cup onion, chopped
- 4 garlic cloves, minced
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp butter
- 2 tbsp cilantro, chopped
- Southwest seasoning:
- 1 ½ tsp chili powder
- ½ tsp cumin
- ½ tsp oregano
- 1 tsp paprika
- ¼ tsp black pepper
- ½ tsp salt
- ⅛ tsp cayenne
Instructions
- Mix the Southwest seasoning blend in a bowl.
- Season chicken with honey and half the spice mix.
- Cook pasta al dente; set aside.
- Sauté chicken in olive oil until cooked through; set aside.
- In the same skillet, sauté onion and garlic in butter.
- Add tomatoes and remaining spices; simmer.
- Stir in cream and cheese; let it melt.
- Combine pasta, chicken, and sauce; toss well.
- Garnish with cilantro and serve hot.
