Juicy steak bites paired with crispy, garlicky potatoes in a buttery herb sauce. This one-skillet recipe is quick, easy, and full of flavor!


Ingredients

  • 4 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 pound Yukon Gold or red potatoes, cut into ½-inch chunks
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • pounds sirloin steak, cut into 1-inch chunks
  • Fresh parsley, chopped (optional)

Instructions

  • Heat a skillet over medium-high heat. Melt 2 tablespoons of butter with olive oil.
  • Add potatoes, garlic, oregano, rosemary, salt, and pepper. Cook 4–5 minutes per side until fork-tender. Set aside.
  • Increase skillet heat to high. Add remaining butter and sear steak bites for 1 minute. Stir and cook an additional 1–2 minutes to desired doneness.
  • Combine steak and potatoes, toss well, and garnish with parsley.

Notes

  • For best results, use a hot skillet and avoid overcrowding the steak.
  • Adjust seasoning to taste before serving.
