Ingredients
– 3 cups cooked rice (1 cup uncooked)
– 16 oz frozen broccoli florets (thawed and drained)
– 1 small onion, finely chopped
– 1 can (10.75 oz) cream of mushroom soup
– 1/2 cup milk
– 1 tsp salt
– 1/2 tsp black pepper
– 1/4 tsp garlic powder
– 1/4 tsp paprika
– 2 cups shredded cheddar cheese (divided)
Instructions
1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
2. Microwave broccoli for 5 minutes; drain and chop into bite-sized pieces.
3. Mix rice, onion, soup, milk, seasonings, and 1 cup cheddar in a bowl. Fold in broccoli.
4. Spread mixture into baking dish and top with remaining cheese.
5. Bake 35-40 minutes until bubbly and golden. Rest before serving.
Notes
– Use fresh broccoli if desired; steam or blanch before adding.
– Casserole can be prepped ahead and refrigerated. Add 15 minutes to bake time.
