Instructions
- Prepare the Oreo Crust: Preheat oven to 350°F (175°C). Combine crushed Oreo cookies and melted butter. Press into the bottom of a 9-inch springform pan.
- Make the Cheesecake Filling: In a large bowl, mix cream cheese and sugar until smooth. Add sour cream, cocoa powder, and vanilla. Beat in eggs one at a time. Fold in cherry pie filling. Pour over crust.
- Bake the Cheesecake: Bake for 50-55 minutes or until set. Cool completely on a wire rack.
- Prepare the Ganache Topping: Heat heavy cream until simmering, then pour over chopped chocolate. Let sit for 1 minute, then stir until smooth.
- Assemble the Cheesecake: Pour ganache over cooled cheesecake. Refrigerate for at least 4 hours or until ganache is set.
- Garnish and Serve: Garnish with fresh raspberries and chocolate shavings before serving.
