  • For the Ganache Topping:
    • 2/3 cup heavy cream
    • 6 ounces semi-sweet chocolate, chopped
  • For Garnish:
    • Fresh raspberries
    • Chocolate shavings

Instructions

  • Prepare the Oreo Crust: Preheat oven to 350°F (175°C). Combine crushed Oreo cookies and melted butter. Press into the bottom of a 9-inch springform pan.
  • Make the Cheesecake Filling: In a large bowl, mix cream cheese and sugar until smooth. Add sour cream, cocoa powder, and vanilla. Beat in eggs one at a time. Fold in cherry pie filling. Pour over crust.
  • Bake the Cheesecake: Bake for 50-55 minutes or until set. Cool completely on a wire rack.
  • Prepare the Ganache Topping: Heat heavy cream until simmering, then pour over chopped chocolate. Let sit for 1 minute, then stir until smooth.
  • Assemble the Cheesecake: Pour ganache over cooled cheesecake. Refrigerate for at least 4 hours or until ganache is set.
  • Garnish and Serve: Garnish with fresh raspberries and chocolate shavings before serving.
