  • 2 cups cooked chicken, shredded
  • 8 slices bacon, cooked and crumbled
  • 1 package (16 oz) rotini pasta
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups heavy cream
  • 1 packet ranch dressing mix
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Preheat Your Oven: Preheat the oven to 350°F (175°C).
  • Cook the Pasta: Cook rotini pasta according to package instructions until al dente; drain and set aside.
  • Prepare the Skillet: In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent.
  • Combine Ingredients in the Skillet: Add shredded chicken, crumbled bacon, and ranch dressing mix to the skillet. Stir to combine. Pour in heavy cream and bring to a simmer. Add salt and pepper to taste.
  • Mix Pasta and Sauce: Combine cooked pasta with the chicken and bacon mixture in a large baking dish. Stir in half of the mozzarella and cheddar cheese.
  • Bake the Casserole: Top with the remaining cheese and bake for 20-25 minutes until bubbly and golden brown.
  • Garnish and Serve: Garnish with fresh parsley before serving. Enjoy!

Notes

  • You can substitute rotini with any short pasta like penne or fusilli.
  • For a lighter version, use whole wheat pasta and light cream or milk.
  • To make it ahead, assemble the casserole and refrigerate it until ready to bake.
  • Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
