Ingredients

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup baby spinach, chopped
  • 4 large eggs
  • Optional: Fresh basil or chives for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • Divide tomatoes, bell pepper, onion, garlic, and feta into 4 ramekins or place everything in one large dish.
  • Drizzle olive oil and sprinkle seasoning (oregano, thyme, salt, pepper, red pepper flakes) evenly.
  • Bake for 25 minutes until the veggies are tender and feta is golden.
  • Stir in spinach until wilted. Create small wells in the center and crack an egg into each.
  • Return to the oven and bake for 10 minutes, until eggs are set.
  • Top with fresh herbs and serve with crusty bread or pita.
