- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves garlic, minced
- 8 ounces feta cheese
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes
- 1 cup baby spinach, chopped
- 4 large eggs
- Optional: Fresh basil or chives for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Divide tomatoes, bell pepper, onion, garlic, and feta into 4 ramekins or place everything in one large dish.
- Drizzle olive oil and sprinkle seasoning (oregano, thyme, salt, pepper, red pepper flakes) evenly.
- Bake for 25 minutes until the veggies are tender and feta is golden.
- Stir in spinach until wilted. Create small wells in the center and crack an egg into each.
- Return to the oven and bake for 10 minutes, until eggs are set.
- Top with fresh herbs and serve with crusty bread or pita.
