Ingredients

  • 2 ripe medium avocados, diced
  • 4 ounces feta cheese, cubed
  • 3 medium Roma tomatoes, seeded and diced
  • 1/3 cup red onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley or cilantro, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon fine sea salt (to taste)

Instructions

  • Dice avocados and place them in a medium bowl.
  • Add feta cheese, diced tomatoes, red onion, minced garlic, and chopped herbs.
